Completed the third iSPYawards ceremony at the Hilton Brighton Metropole. The Hilton catering team always set the bar high, this event was no exception. We had to work around a dodgem set up brought in and built inside the conference centre. With our own vehicles and set up also needing to get inside through a different entrance with limited headroom time was going to be tight. We sent our team in early to assist the Hilton team make the necessary modifications required and we were up and running 'cooking on gas' well within our critical window.
Our role was the set up and manage a bespoke extraction fan system running 40m between the Fish & Chip caterers and an outside exit door. Our extraction system worked perfectly and Lawrence balanced the fans as the Fish and chip caterers literally turned up the heat cooking from fresh and serving 280 guests fish, chips and mushy peas in only 67 minutes ! We didn't have time to eat the food offered post service as we had to pack up and assist in getting the Fish & Chip Catering Tram out of the building by 22.00hrs. Another successful event, my thanks to Steve, Lawrence, Yousery, Alan, Pam, and the rest of the team for supporting us on this event.
